Tasting Notes:
Of medium tonality with garnet notes, it presents aromas of spices such as star anise, candied black and red fruit, gravel notes, as well as florals. When opened it gives us aromas of fresh tobacco, vanilla, chocolate and fine wood. In the mouth it is balanced, elegant and fresh with soft tannins with a good persistence.

Icon is the assembly of 2 grapes, the main one, Mourvedre, comes from Valle Seco, which is located at an altitude of around 550 meters above sea level east of Valle de Guadalupe, which results in a slower ripening. For the second grape, the Cabernet Sauvignon from the Valle de Guadalupe was used, making the selection of the barrels during aging. The Mourvedre harvest was made on September 23.

Harvested by hand in small javas, the bunches are selected by hand to later be destemmed and transferred to stainless steel tanks. A cold maceration is carried out for several days to extract the color and primary aromas and then allow the temperature to rise and inoculate with yeast focused on respecting the characteristics of the varietal. Fermentation takes place in the cool temperature range with several pump-overs and daily tampers.
Once the fermentation is finished, a cold post-fermentation maceration is carried out in a closed tank to seek a greater extraction of tannins and additional compounds.
Gentle pressing is carried out and malolactic fermentation is activated in bins. Once the wine is finished, the wine is settled cold and transferred to barrels for aging. The varietals were aged separately to later be assembled and returned to the barrel to allow integration and homogenization.
The wine is clarified and lightly filtered before being bottled
