Tasting Notes:
With a cherry hue and intense shine, the initial aromatic expression presents intense aromas of strawberry with hints of watermelon, to later show us notes of pink guava, as well as pepper and other spices.


In the mouth it is dry, leaving clear its acidity in balance, its fruitiness coincides with what is anticipated on the nose; strawberries and guava, a wine with a very tropical expression. The permanence is medium and its aftertaste offers us a pleasant finish with subtle bitterness that invites us in each glass to continue drinking.


Harvest:
Grapes from an irrigated vineyard in the San Vicente Ferrer Valley with a uniform development.
The harvest was made on September 3, 2017 at a maturation for rosés in order to respect the acidity.


Oenology:
Harvested by hand in small javas, the bunches are selected by hand to then be destemmed and pressed at low pressure. Maceration is not carried out, the tone of the wine is extracted during pressing.


The must is settled at a low temperature and then transferred from its sediments to stainless steel tanks. Fermentation takes place at 19C initially with a yeast with an aromatic focus, the temperature is raised late in the process which allows the wine to dry.


Once the fermentation is complete, the wine is stabilized and chilled for a period of time before being bottled.
