With an intense red hue and unctuous body, on the nose it initially presents aromas of plums, blueberry, blackberry and then opens in hibiscus flower, vanilla bean, cinnamon and light wood notes.
On the palate it is fresh with pleasant acidity and structure on the palate, finishing with soft tannins and good permanence.
Almost 40-year-old seasonal grapes from a vineyard in the Valle de Guadalupe.
The harvest was made on August 29 based on organoleptic tests looking for the fresh notes of the varietal.
Harvested by hand in small javas, the bunches are selected by hand to later be destemmed and transferred to stainless steel tanks. A cold maceration is carried out for several days to extract color and primary aromas and then allow the temperature to rise and inoculate with selected yeast. Fermentation takes place in the warm range with several pump-overs and daily tampers.
Once the fermentation is finished, a cold post-fermentation maceration is carried out in a closed tank to seek a greater extraction of tannins and additional compounds.
A soft pressing is carried out and the malolactic fermentation is activated in containers, once it is finished, the wine is settled cold and transferred to barrels for aging.
The wine is clarified and lightly filtered before being bottled.
